 Irish whiskey is a very popular form of hard liquor distilled from the grains employed in the production of traditional whiskey. It is made from both Irish and American whiskey, which means it has the same maturation process and ingredients. It is generally aged in still used Bourbon barrels, which have a reputation for holding their flavor for a longer period of time. It is traditionally aged in whiskey barrels with an oak heel, which is another method whiskey is aged in.

Irish whiskey distillers enjoy their whiskey, so much so that many clubs have been formed just for this purpose. There are also professional appraisals done on Irish whiskey by authorities other than the distilleries themselves. These experts not only rate the quality of each specific distiller's products but comment on the overall taste as well. Distilling whiskey from grains was first done in Ireland, although its exact origins are somewhat disputed. The majority of Irish whiskey is produced in Donegal, a county in southwestern Ireland. The whiskey is distilled from five grains, namely oats, barley, rye, wheat, and bulgur. There is also one distillery that produces an entirely different type of Irish whiskey entirely, called the "Glendronach". Regardless, of where the grains are distilled from, they all must undergo a specific aging process.

When it comes to distillation, the whiskey is distilled using heat from an industrial process. The majority of Irish whiskies are distilled in Scotland. Many of the distillers also use traditional stills and molds to produce the distinctive taste of Irish whiskey. Although most distillers will claim to be using the "traditional stills and molds", not all distillers follow this practice. Recently in November 2020, Jameson Irish Whiskey introduced a limited run of legendary Whiskey Trees for the 2020 Holiday season.
